Ok so here it is!
For the chicken I prefer wings or thighs with the bone, I feel keeps them juicy when baking.
Ingredients for Chicken:
3 lbs chicken thighs.
2 tbsp cajun pepper
1 tsp salt
1 tsp black pepper
1 tbsp thyme
1 tbsp olive oil
2 tbsp vinegar
water
Preheat your oven to 400 degress.
Clean the chicken by putting them in a bowl with water and 2tbsp vinegar for 20 minutes. Then wash them. believe me it'll wash away any smell or dirt or anything of that sort.
Now in a bowl mix the chicken with olive oil first then add the salt, black pepper, thyme and finally the cajun pepper. mix well, you want to cover it with cajun so that it looks red, so add more cajun if 2 tbsp is not enough. now you can put it in the fridge for half hour or more, even over night if you like. When im in a hurry I just put them in the oven, still tastes amazing.
so thats the next step put them in a pan and in to the oven for about 45 minutes.
Now time to do the salad while the chicken is cookin'
Ingredients for salad:
1 lbs mixed greens that you prefer.
I love spinach, radicchio, chard, arugula, beet greens. This is what i used.
10 baby carrots
10 cherry tomatoes
3 tbsp cheese:mozzarella or parmasean or both, your choice.
1tbsp olive oil
pinch of salt
pinch of black pepper
pinch of oregano
1tsp lemon juice
2 tsp balsamic vinegar
In a bowl mix everything together as much as you can.
What I like to do is put it in the freezer for about 10 minutes, it will be cold and just amazingggggg!!!!
Now put it all together Salad first then Chicken on top or on the side.
